My cat has thumbs and he uses them when picking things up and when gripping the same way we would use our thumbs. He likes to take peanuts from the peanut jar by reaching in and grabbing them with his little hands

technically what you’re describing isn’t thumbs, it’s a cat’s dewclaws. ‘cat thumbs’ develop when the cat has a genetic fault that causes to grow a second pair of dewclaws, the second set are much higher up than the regular dewclaw, and they stick out and move like thumbs.
In fact, every cat has thumbs like the cat in the video. Most of them are just very small stumps. My cat there’s on my lap right now has some small “thumbs”.
